Quinoa Chili

This chili, although meat-free, is DELICIOUS!  I definitely recommend this meal on it's own merit, but also because it is perfect for that night when you forget to thaw out a meat.   Maybe that's just me...

  • 1 cup quinoa
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 2 (14.5-ounce) cans diced tomatoes
  • 1 (15-ounce) can tomato sauce
  • 1 (4.5-ounce) can diced green chiles
  • 1 1/2 tablespoons chili powder, or more, to taste
  • 2 teaspoons ground cumin
  • 1 1/2 teaspoons paprika
  • 1/2 teaspoon cayenne pepper
  • Kosher salt and freshly ground black pepper, to taste

Our changes- hubby said he basically just put everything in at once, with the exception of the quinoa.  We were worried at first that it might make some of the ingredients soggy or tough, but everything was perfect.  The avocado was a perfect topper.  I added some shredded cheddar and MJack cheeses to the top of mine.  Even out two year old liked it!

It also reheated very nicely, which is super important to a working mama like me!
